Baked Brie with Spiced Almonds and Honey

Looking for a simple way to impress your guests this New Years Eve? Everyone loves baked brie, and turns out, it’s as easy as 1…2…3! The spiced almonds in this preparation give this decadent dish a pop of texture and balance the inherent richness of the cheese, while the drizzle of honey adds a hint of holiday glam. This elegant app always impresses when it is presented and then elicits ooohs and aaahs when the first cut creates a molten flow of gooey goodness. It’s like dressed up comfort food!


Baked Brie with Spiced Almonds & Honey

This elegant, yet simple baked brie is the perfect appetizer to impress your guests this holiday season.


1/2 cup sliced almonds

1 Tbl butter

1 generous tsp brown sugar

Dash of cayenne, if desired

Large pinch of salt


8 oz. wheel of brie or Camembert

Loaf of Italian bread


Preheat the oven to 350 degrees. Place the almonds in a small, dry skillet (preferably non-stick) and cook over very low heat, tossing occasionally, until fragrant and just barely golden. (It’s best to keep your eye on the almonds because if you rely on your nose, it might be too late by the time you start to smell the roasted aroma. Trust me, I’ve done that too many times to count!)

Once the almonds are toasted, remove the skillet from the heat and immediately add the butter and brown sugar. Toss the almonds in the melted butter and brown sugar until all are well coated in the caramel. Add salt and a pinch of cayenne, if desired, and then toss again to blend the spices throughout. Pour the spiced almonds out onto a sheet of wax paper to cool.

At this step, you can choose whether you want to remove the top rind of the cheese or leave it on. It’s purely personal aesthetic preference – it will cook the same either way. If you choose to remove the rind, use a very sharp, long-bladed knife to remove a very thin slice just off the top, leaving the sides and bottom intact. Place the brie in a small baking dish (you will be serving it in this dish, so pick accordingly). Mound the spiced almonds on top and drizzle with a bit of honey to your liking. (You may have more almonds than you need. If so, sprinkle them on a salad or store them in a baggie for later!)

Bake the brie uncovered for 10-15 minutes until the cheese is very soft. Serve with French bread or water crackers and grapes or sliced apples.
